repainted and beautiful!
So Evan had found a can of oops paint that I used on Lucy's shelves, and since there was leftover I decided to paint a free coat rack(for the wall) that I could use for my jewelry I purchased this year:)
The project probably cost $0.35 to do.
I hung it over my dresser that just happens to be the same color, or very similar. I bought it from a vintage thrift shop:)

Failed oatmeal and Zumba -Friday Post
So let's just say that I HATE oatmeal, or did, well still kind of do. Evan's mom makes great oatmeal, sweet and filling. I learned how to make it, but I don't think I remember the correct way/recipe, so we have been trying. different stuff. Wednesday we had blackberry oatmeal and it was ok, today I tried cooking it with Peaches...FAIL-Evan still ate it and liked it, but I really think since I grew up hating it, I should be the judge.
I decided to buy strawberries and try again tomorrow. Lucy and I went to Costco for Strawberries because our garden isn't producing yet. Lucy chased her shadow in Costco and entertained many people.
We had yummy dinner leftovers for our heavy snack and then I made this for lunch! YUMMY!
Mexi Bowl(I made it up, I get to name it:)) -yes, I'm sure something similar is out there, but this is what we made from our fridge:) We've made this before, and will continue to do so OFTEN. YUMMY and EASY!
1 serving:
1/2 cup brown rice
1/2 cup beans (I used black and white)
1/2 tomato
2-3 tablespoons cilantro chopped
1/8 red onion
A tiny drizzle of olive oil
A tiny drizzle of lemon juice(or lime)
Salt and Pepper to taste
And Salsa. YUMMY! My friend from Mexico taught me how to make salsa and some other stuff:)-real Mexican Chalupas to come-be excited!
Salsa Verde-Green Salsa(it's different every time)
9 little tomatillos
1 jalapeno
1-2 clove garlic
cilantro
1-2 tsp chicken boullion
1/2 red onion
water
add to taste after blended
salt
pepper
Salsa Rojo-Red Salsa-different every time
7 little tomatillos

Roast washed and dried veggies in a dry frying pan on med-high heat until charred and soft all over. Throw everything in the blend and blend just until blended..don't puree. Start with maybe a cup of water and add more according to taste and consistency.
Then had leftovers for dinner, YUM-I want more.

I go to 24 hr fitness and have to fight for a spot from the most wanted instructor-Felix. You can sign up for a week in advance but if you don't get in soon enough then you have to go the day of the class hours earlier to get a ticket from the remaining spots. The instructor is that good-and believe me, Zumba is horrible with the wrong instructor. I've walked out of classes before.
I go with Mindy Harris. She is a Zumba-aholic and Pro!:)
A few months ago I died half way through the class, I'd like to report that I didn't die this time, the last 5 minutes were rough, but I LOVE IT! Loud Latin music, fun people, lots of energy..so fun!

New Recipes
I like getting back to the Fat Smash diet when I need a detox. So here is what we tried today.
Breakfast Blackberry Oatmeal:
2 servings:
1 cup oats
2 cups water
2 cups blackberries
1/2 tsp salt
1 cup Milk
Boil water and salt. Add oats and berries, turn to medium and cook for 6 minutes (stirring occasionally). Take off heat and serve after a few minutes of sitting. Serve in 2 bowls and add 1/2 cup milk to each bowl.
Snack: 2 servings Rice and Bean Garden Salad
2-3 cups fresh garden lettuce(I had butter bib and ice berg from my garden)
1/2 cup of cherry tomatoes
1/2 cup cucumbers
1 cup brown rice
1 cup great northern beans(white beans)
2 tablespoons light zesty italian dressing
Lunch: 2 servings
Tony Chachere White Beans and Rice
1 cup Greath Northern White Beans
1 cup brown rice(I used the frozen rice from Costco)
Snack: Peach
white peach
Dinner:
Savory Wild Rice Pilaf
2 tablespoons olive oil
1 cup uncooked Wild Rice(can use wheat bulgar)
1/2 cup chopped Red, Yellow, Green or Orange Bell Pepper
1/2 cup chopped onion(any kind)
1/2 tsp of garlic powder
2 cups water
2 tsp chicken boullion
1/2 tsp poultry seasoning(you can use sage)
1 can of chic peas
Heat oil and add peppers, onion, garlic, rice and saute until onions are tender-about 5 minutes. Bring to a boil, cover and simmer for 45 minutes. If you substitute wheat bulgur 15 minutes or check times for any other sub.
Add can of chic peas and serve. YUM! You can do less oil if you want. I can't wait to eat leftovers. The house smelled sooo good, I just wanted to eat it the entire cooking time.
